I noticed some sweet potatoes in the basket beneath the counter and got a hankering for sweet potato rolls (not that I'd ever had any). It didn't take long to find a recipe online, so I decided to give it a go. The flavor was great, but the texture was a bit dry: more like biscuits than yeast rolls. Not terribly surprising, I guess, since converting regular recipes to gluten-free ones can be tricky. If I try again, I'll add more water (maybe milk?) and less of my gf flour mix.
