An Edible Creation




This afternoon, I decided to make chocolate chip cookies. As I grabbed a stick of butter, though, I changed my mind — and changed up the recipe to create something new. So far the reviews have been good. If you'd like to try my recipe, here it is:

PB & Chocolate Bites

½ cup butter, softened
½ cup peanut butter
¾ cup confectioner's sugar
¾ cup granulated sugar
1 tsp. vanilla extract
2 eggs
2 ¾ cups GF flour blend (I like this one)
1 tsp. zanthan gum*
1 tsp. baking soda
½ tsp. salt
1 cup chocolate chips

  1. Preheat oven to 375º F.
  2. Cream together butter, peanut butter, sugars and vanilla. Add eggs one at a time, mixing until incorporated.
  3. Add one cup of flour mix, xanthan gum, salt and baking soda. Mix until blended. Add the next cup of flour mix. Mix until blended. Add final ¾ cup flour mix and you guessed it: mix until well blended. Stir in chocolate chips.
  4. Scoop up dough in a tablespoon (measuring spoon) and place each “ball” on ungreased cookie sheet, an inch or two apart.
  5. Bake for 10 minutes. Let rest on pan about ten minutes, then move to wire rack to cool.

Makes close to three dozen.

*Most GF flour mixes contain zanthan gum; this is addition to the zanthan in the flour mix.
